High & Dry Gin
It took Simon eight months to develop his first gin, with countless small still runs in the home kitchen going into the wee hours, honing both his skills in distillation and recipe development.
High & Dry Signature Gin pays tribute to his Hill family heritage and their iconic Hills Hoist. It echoes the story of great uncle Lance's first rotary hoist, engineered and built in his own backyard at Bevington Road, Glenunga, SA. This enjoyable and delightfully refined London Dry style gin is another product from home, with copious amounts of heart and soul.
There aren't too many of us who haven't got a memory to share about swinging on the Hills Hoist, which found its way into so many Aussie backyards. It's no wonder the hoist is listed as an Australian National Treasure - we hope we can be part of many more memories with this delicious gin.
TASTING NOTES
High and Dry is unctuous and juniper-forward, balancing sweet and savoury botanicals including cassia bark, citrus peel, saltbush, sage, and rosemary. Simon recommends trying it neat but it also pairs well in a G&T with a 3:1 ratio of Fever Tree Mediterranean tonic and a dry blood orange and peppercorn garnish! If martinis are your thing, try a 6:1 ratio of H&D Signature Gin and a good quality, Australian dry vermouth with an olive garnish and you won't be disappointed.
